Garlic Braised Beef Short Ribs

There's something undeniably comforting about the aroma of slow-cooked meats wafting through the kitchen, teasing our taste buds and beckoning us to the dining table. And when it comes to comfort food classics, few dishes surpass the indulgent delight of tender, succulent short ribs. These melt-in-your-mouth ribs have a robust garlic, onion, and aromatic herbs flavor. So, fire up your Dutch oven and let this dish invite you on a journey of flavor that will surely earn its place as a kitchen staple.


Ingredients:

  • 2 tablespoons of avocado oil

  • Bone-in short ribs, preferably at least 1½ inches thick

  • Kosher salt and freshly ground pepper

  • 2 large heads of garlic, minced

  • 3 shallots, finely chopped

  • 2 cups of beef stock or bone broth, plus more as needed

  • 4 sprigs of thyme

  • Fresh parsley, coarsely chopped

  • 1 tablespoon of finely grated lemon zest


Instructions:

Preheat your oven to 275°F (135°C).

  1. Immerse your short ribs in a generous seasoning of kosher salt and freshly ground pepper, perhaps even adding a dash of Kinder’s caramelized onion butter seasoning for an explosion of rich flavors.

  2. Heat a Dutch oven over medium-high heat and add avocado oil.

  3. Sear the short ribs on all sides until they develop a rich, golden-brown crust, then set aside.

  4. In the same pot, sauté the shallots for about 2 minutes until they soften, then add the minced garlic, stirring constantly to prevent burning.

  5. Return the seared short ribs to the pot, nestling them amidst the aromatic shallots and garlic. Pour in enough beef stock to almost cover the ribs.

  6. Add the fragrant thyme sprigs to the pot, cover it with a lid, and transfer it to the preheated oven.

  7. Allow the short ribs to braise gently in the oven for approximately 3 hours or until tender and practically falling off the bone.

  8. Once done, carefully remove the succulent short ribs and sprinkle with fresh lemon zest and chopped parsley for a burst of brightness.

  9. Serve these delectable ribs alongside your choice of accompaniments, whether velvety cauliflower mash, silky butternut squash puree, or a medley of your favorite seasonal vegetables.
