I was craving French toast sticks recently, so I just had to try out a low-carb version! This recipe uses my 90-second bread recipe for the bread used here.
Ingredients
3 eggs
¼ cup Fairlife milk or heavy cream
2-3 tbsp brown sugar stevia
1 tsp vanilla extract
1-2 tbsp cinnamon
Ghee or regular butter/avocado oil
Directions
Start by making my 90-second bread recipe.
Once your bread is done, slice it into sticks. (Note: I typically will then pop them in the oven at around 250 F to dry them out for my preferred French toast texture.)
Mix your eggs, milk/cream, brown sugar stevia, vanilla extract, and cinnamon together to make your custard.
Dunk your sticks liberally in your custard until coated well, and then place on a medium-hot skillet that has been coated well with ghee (or you can use regular butter or avocado oil). Note: ghee has a higher smoke point and is better for high-heat cooking. It will also give a great flavor to your French toast.
Once browned nicely on each side, your French toast is ready to serve with your favorite sugar-free syrup, berries, or sugar-free whipped cream. Yum!
