An easy and filling cheesy egg breakfast with a slight kick of spice!
Spicy Chorizo, Bacon, and Egg Casserole
Ingredients:
1 lb spicy chorizo
10 eggs
6 slices of bacon, cooked and torn into pieces
shredded cheese
1 tsp minced garlic
2 bell peppers
fresh chives
Directions
Preheat oven to 350 F
In a cast iron pan, cook chorizo on medium-high heat and set aside
Dice bell peppers and sauté in the pan until their color starts to change.
Add 1 tsp minced garlic and stir.
Add back half of the chorizo and sprinkle shredded cheddar to coat the pan
Whisk 10 eggs and1/4 to 1/2 cup heavy cream, and season to taste
Pour egg mixture into the pan, top with bacon bits, freshly chopped chives, and the remaining half of the chorizo
Bake at 350 F for 20-25 minutes
