Spicy Chorizo, Bacon and Egg Casserole

An easy and filling cheesy egg breakfast with a slight kick of spice

Spicy Chorizo, Bacon, and Egg Casserole


  • 1 lb Spicy Chorizo

  • 10 eggs

  • 6 Slices of Bacon, cooked and torn into pieces

  • Shredded Cheese

  • 1 tsp minced garlic

  • 2 Bell Peppers

  • Fresh Chives


  • Preheat oven to 350 F

  • In a cast iron pan, cook chorizo on medium-high heat and set aside

  • Dice bell peppers and sauté in the pan until their color starts to change.

  • Add 1 tsp minced garlic and stir.

  • Add back half of the chorizo and sprinkle shredded cheddar to coat the pan

  • Whisk 10 eggs and1/4 to 1/2 cup heavy cream, and season to taste

  • Pour egg mixture into the pan, top with bacon bits, freshly chopped chives, and the remaining half of the chorizo

  • Bake at 350 F for 20-25 minutes
