Low-Carb & Gluten-Free Snickerdoodles

Ingredients

DRY INGREDIENTS

  • 1 ⅓ cup almond flour

  • 2 tablespoons coconut flour

  • ⅓ cup erythritol or monk fruit

  • ½ teaspoon baking soda

  • ½ teaspoon xanthan gum

LIQUID INGREDIENTS

  • ¼ cup melted butter

  • ¼ cup Fairlife Milk or unsweetened almond milk

  • 1 teaspoon vanilla extract

  • 1 teaspoon apple cider vinegar

CINNAMON COATING

  • 2 teaspoons ground cinnamon

  • 3 tablespoons erythritol or monk fruit

Directions

  1. In a large mixing bowl, whisk together all the dry ingredients: almond flour, coconut flour, sweetener, baking soda, and xanthan gum.

  2. Pour in the melted butter, milk, vanilla, and apple cider vinegar.

  3. Combine until it all forms a solid dough ball and set aside.

  4. In a separate bowl, whisk together the ground cinnamon and sugar-free crystal sweetener of your choice.

  5. Shape dough into 12 even dough balls, and then roll each in the cinnamon mixture until coated well.

  6. Place the coated dough balls on a parchment-lined baking sheet. Gently press down on each one with a spatula to flatten into cookie shapes (these will not flatten while baking).

  7. Bake at 350 F for 12 to 15 minutes (I pulled mine at 12 minutes).

  8. Let cool before serving (they will firm up).
