Low-Carb & Gluten-Free Snickerdoodles
Ingredients
DRY INGREDIENTS
1 ⅓ cup almond flour
2 tablespoons coconut flour
⅓ cup erythritol or monk fruit
½ teaspoon baking soda
½ teaspoon xanthan gum
LIQUID INGREDIENTS
¼ cup melted butter
¼ cup Fairlife Milk or unsweetened almond milk
1 teaspoon vanilla extract
1 teaspoon apple cider vinegar
CINNAMON COATING
2 teaspoons ground cinnamon
3 tablespoons erythritol or monk fruit
Directions
In a large mixing bowl, whisk together all the dry ingredients: almond flour, coconut flour, sweetener, baking soda, and xanthan gum.
Pour in the melted butter, milk, vanilla, and apple cider vinegar.
Combine until it all forms a solid dough ball and set aside.
In a separate bowl, whisk together the ground cinnamon and sugar-free crystal sweetener of your choice.
Shape dough into 12 even dough balls, and then roll each in the cinnamon mixture until coated well.
Place the coated dough balls on a parchment-lined baking sheet. Gently press down on each one with a spatula to flatten into cookie shapes (these will not flatten while baking).
Bake at 350 F for 12 to 15 minutes (I pulled mine at 12 minutes).
Let cool before serving (they will firm up).
