Mojo Braised Pork

Ingredients

  • 4-5lb boneless pork shoulder or Boston butt

  • 2 heads peeled garlic

  • 2 shallots

  • zest of 2 oranges

  • zest of 3 limes

  • 2 tbsp fresh oregano leaves

  • ½ bunch fresh mint leaves

  • 1 tbsp (5g) fresh ground cumin

  • 2 whole Serrano chilies

  • 1 cup olive oil

  • 1½ tbsp (26g) kosher salt

  • 1 cup (250ml) fresh lime juice or Seville orange juice

  • 1 cup (250ml) fresh orange juice


Directions

Prepare the Marinade

Start by creating a vibrant marinade by combining peeled garlic, shallots, orange zest, orange juice, lime juice, lime zest, fresh oregano leaves, mint leaves, ground cumin, Serrano chilies, olive oil, and kosher salt in a food processor. Blend until smooth. Save 1 cup of marinade to use as a sauce for serving later.


Marinate the Pork

Place the boneless pork shoulder or Boston butt in a large bowl or resealable plastic bag. Massage the prepared marinade onto the pork, ensuring it is evenly coated. Allow the pork to marinate for at least 4 hours, or ideally overnight in the refrigerator. This step allows the flavors to penetrate the meat, resulting in a rich and flavorful dish.


Preheat and Sear

Preheat your oven to 325°F (163°C). Heat a bit of olive oil over medium-high heat in a large, oven-safe pot or Dutch oven. Sear the marinated pork on all sides until it develops a golden brown crust. This step helps lock in the juices and enhances the overall flavor.


Braise to Perfection

Pour in the remaining marinade the pork was marinating in, and add some chicken broth if the liquid does not come up halfway on the pork. Cover the pot with a lid and transfer it to the preheated oven. Allow the pork to braise for approximately 3-4 hours, or until it becomes fork-tender. The slow cooking ensures that the meat absorbs the citrus-infused marinade, resulting in a succulent and melt-in-your-mouth texture.


Serve and Enjoy

Once the Mojo Braised Pork is done, remove it from the oven and let it rest for a few minutes. Shred the pork using two forks, and serve it alongside your favorite sides. The combination of citrus, herbs, and perfectly cooked pork will make this dish a showstopper at your dining table.
